  7. Add the sliced carrots and diced potatoes to the pot, stirring to combine.
  8. Bring the stew to a simmer, then reduce the heat to low and cover the pot.
  9. Let the stew simmer gently for 1 1/2 to 2 hours, or until the meat is tender and the vegetables are cooked through.
  10. Season the stew with salt and pepper to taste.
  11. Remove the bay leaves from the pot before serving.
  12. Ladle the Irish stew into bowls and garnish with chopped fresh parsley, if desired.
  13. Serve the stew hot, accompanied by crusty bread or Irish soda bread for a hearty and comforting meal.

Bangers and Mash

Ingredients:

For the Bangers (Sausages):

  • 1 lb pork or beef sausages (traditional British or Irish bangers if available)
  • 1 tablespoon vegetable oil

For the Mash (Mashed Potatoes):

  • 2 lbs potatoes (such as Russet or Yukon Gold), peeled and cut into chunks
  • 4 tablespoons butter
  • 1/2 cup milk
  • Salt and pepper to taste

For the Onion Gravy:

  • 2 large onions, thinly sliced
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 2 cups beef or vegetable broth
  • 1 tablespoon Worcestershire sauce
  • Salt and pepper to taste

Instructions:

  1. Start by preparing the mashed potatoes. Place the potato chunks in a large pot and cover them with water. Bring the water to a boil, then reduce the heat to medium and simmer the potatoes until they are tender, about 15-20 minutes.
  2. While the potatoes are cooking, prepare the onion gravy. In a skillet, melt the butter over medium heat. Add the sliced onions and cook until they are soft and caramelized, about 15-20 minutes.
  3. Sprinkle the flour over the caramelized onions and cook for 1-2 minutes, stirring constantly.
  4. Gradually pour in the beef or vegetable broth, stirring constantly to prevent lumps from forming. Bring the gravy to a simmer and cook until it thickens, about 5 minutes. Stir in the Worcestershire sauce and season with salt and pepper to taste.
  5. While the gravy is simmering, cook the sausages. Heat the vegetable oil in a large skillet over medium heat. Add the sausages to the skillet and cook them until they are browned on all sides and cooked through, about 10-12 minutes.
  6. Once the potatoes are tender, drain them and return them to the pot. Add the butter and milk to the pot and mash the potatoes until they are smooth and creamy. Season with salt and pepper to taste.
  7. To serve, spoon the mashed potatoes onto plates or into bowls. Top with the cooked sausages and ladle the onion gravy over the top.
  8. Garnish with chopped fresh parsley, if desired, and serve hot.

Dublin Coddle

Ingredients:

  • 1 lb pork sausages (traditionally Irish bangers)
  • 1 lb thick-cut bacon, chopped
  • 2 onions, sliced
  • 2 cloves garlic, minced
  • 4 potatoes, peeled and sliced
  • 2 carrots, peeled and sliced
  • 2 cups chicken or vegetable broth
  • 1 tablespoon fresh parsley, chopped
  • Salt and pepper to taste

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, cook the chopped bacon over medium heat until it starts to brown and render its fat, about 5 minutes.
  3. Add the sliced onions to the skillet and cook until they are soft and translucent, about 5-7 minutes.
  4. Add the minced garlic to the skillet and cook for an additional minute, until fragrant.
  5. Transfer the cooked bacon and onions to a large oven-safe pot or casserole dish.
  6. In the same skillet, brown the pork sausages on all sides, about 5 minutes. Remove the sausages from the skillet and cut them into large chunks.
  7. Layer the sliced potatoes and carrots on top of the bacon and onions in the pot or casserole dish.
  8. Arrange the browned sausage chunks on top of the vegetables.
  9. Pour the chicken or vegetable broth over the sausage and vegetable mixture.
  10. Cover the pot or casserole dish with a lid or aluminum foil and place it in the preheated oven.
  11. Bake the Dublin Coddle for 1 1/2 to 2 hours, or until the vegetables are tender and the sausages are cooked through.
  12. Remove the pot or casserole dish from the oven and sprinkle the chopped parsley over the top.
  13. Season the Dublin Coddle with salt and pepper to taste.
  14. Serve the Dublin Coddle hot, with crusty bread or Irish soda bread on the side.

Corned Beef and Cabbage

Ingredients:

  • 3-4 lbs corned beef brisket (with spice packet)
  • 1 head of cabbage, cut into wedges
  • 6-8 medium potatoes, peeled and quartered
  • 4 carrots, peeled and cut into chunks
  • 1 onion, peeled and quartered
  • 4 cloves garlic, peeled
  • Water
  • Whole black peppercorns (optional)
  • Mustard or horseradish for serving (optional)

Instructions:

  1. Rinse the corned beef brisket under cold water, then place it in a large pot or Dutch oven. Add the spice packet that comes with the brisket.
  2. Add enough water to the pot to cover the brisket completely. If desired, add some whole black peppercorns for extra flavor.
  3. Bring the water to a boil over high heat, then reduce the heat to low and cover the pot. Let the brisket simmer gently for about 3 hours, or until it is fork-tender.
  4. Once the brisket is cooked, carefully remove it from the pot and transfer it to a cutting board. Let it rest for a few minutes before slicing it thinly against the grain.
  5. While the brisket is resting, add the cabbage wedges, potatoes, carrots, onion, and garlic to the pot with the cooking liquid. Bring the liquid back to a boil, then reduce the heat to low and let the vegetables simmer for about 15-20 minutes, or until they are tender.
  6. Once the vegetables are cooked, use a slotted spoon to transfer them to a serving platter.
  7. Arrange the sliced corned beef on top of the vegetables.
  8. Serve the corned beef and cabbage hot, with mustard or horseradish on the side if desired.

Celtic Mule

Ingredients:

  • 2 oz Irish whiskey
  • 4 oz ginger beer
  • 1/2 oz lime juice
  • Lime wedge, for garnish

Instructions:

  1. Fill a copper mug or glass with ice cubes.
  2. Pour the Irish whiskey and lime juice over the ice.
  3. Top with ginger beer.
  4. Stir gently to combine.
  5. Garnish with a lime wedge.
  6. Serve and enjoy!

Shamrock Sour

Ingredients:

  • 2 oz Irish whiskey
  • 3/4 oz lemon juice
  • 1/2 oz simple syrup
  • 1/4 oz green crème de menthe
  • Maraschino cherry for garnish

Instructions:

  1. Fill a cocktail shaker with ice.
  2. Add the Irish whiskey, lemon juice, simple syrup, and green crème de menthe to the shaker.
  3. Shake well until chilled.
  4. Strain the mixture into a rocks glass filled with ice.
  5. Garnish with a maraschino cherry.
  6. Serve and enjoy!

Irish Coffee

Ingredients:

  • 1 cup freshly brewed hot coffee
  • 1 1/2 oz Irish whiskey
  • 1 tablespoon brown sugar (adjust to taste)
  • Whipped cream, for topping

Instructions:

  1. Brew a cup of your favorite coffee using your preferred method.
  2. While the coffee is still hot, pour it into a heatproof glass or mug.
  3. Add the Irish whiskey and brown sugar to the coffee, stirring until the sugar is dissolved.
  4. Gently float a layer of whipped cream on top of the coffee by pouring it over the back of a spoon.
  5. Serve the Irish coffee immediately, and enjoy it while it’s warm.

Leprechaun’s Mojito

Ingredients:

  • 2 oz white rum
  • 1 oz fresh lime juice
  • 1/2 oz simple syrup
  • 6-8 fresh mint leaves
  • Club soda
  • Lime wedge and mint sprig, for garnish

Instructions:

  1. In a glass or cocktail shaker, muddle the fresh mint leaves with the lime juice and simple syrup.
  2. Fill the glass with ice cubes.
  3. Add the white rum to the glass or cocktail shaker.
  4. Stir or shake well to combine.
  5. Strain the mixture into a highball glass filled with ice.
  6. Top with club soda, to taste.
  7. Garnish with a lime wedge and mint sprig.
  8. Serve and enjoy!

Black Velvet

Ingredients:

  • 1/2 pint Guinness stout (or other stout beer)
  • 1/2 pint chilled sparkling wine or champagne

Instructions:

  1. Fill a champagne flute halfway with chilled sparkling wine or champagne.
  2. Slowly pour the Guinness stout over the back of a spoon to create a layer on top of the sparkling wine.
  3. The Guinness stout should float on top of the sparkling wine, creating a layered effect.
  4. Serve immediately and enjoy!

Sparkling Green Punch

Ingredients:

  • 2 cups pineapple juice
  • 2 cups ginger ale
  • 1 cup green apple soda or lime soda
  • 1/4 cup fresh lime juice
  • 1/4 cup simple syrup (optional, adjust to taste)
  • Ice cubes
  • Lime slices or mint leaves for garnish (optional)

Instructions:

  1. In a large pitcher or punch bowl, combine the pineapple juice, ginger ale, green apple soda (or lime soda), and fresh lime juice.
  2. Stir in the simple syrup if desired, adjusting the sweetness to taste.
  3. Add ice cubes to the pitcher or punch bowl to chill the mixture.
  4. Stir the punch gently to combine all the ingredients.
  5. Garnish with lime slices or mint leaves if desired.
  6. Serve the Sparkling Green Punch in glasses filled with ice, and enjoy!

Pot o’ Gold Punch

Ingredients:

  • 2 cups pineapple juice
  • 1 cup orange juice
  • 1 cup lemon-lime soda
  • 1/2 cup mango or passion fruit juice (for the golden color)
  • Lemon slices or orange slices for garnish (optional)
  • Ice cubes

Instructions:

  1. In a large pitcher or punch bowl, combine the pineapple juice, orange juice, lemon-lime soda, and mango or passion fruit juice.
  2. Stir the mixture gently to combine all the ingredients.
  3. Add ice cubes to the pitcher or punch bowl to chill the punch.
  4. Garnish the Pot o’ Gold Punch with lemon slices or orange slices if desired.
  5. Serve the punch in glasses filled with ice, and enjoy!

Rainbow Spritzer

Ingredients:

  • 1 cup sparkling water or club soda
  • 1/4 cup grenadine syrup
  • 1/4 cup orange juice
  • 1/4 cup pineapple juice
  • 1/4 cup blue sports drink (like Gatorade)
  • Ice cubes
  • Lemon slices or maraschino cherries for garnish (optional)

Instructions:

  1. Fill a glass with ice cubes.
  2. Pour the grenadine syrup into the glass, followed by the orange juice, pineapple juice, and blue sports drink, layering each ingredient carefully to create the colors of the rainbow.
  3. Top the glass with sparkling water or club soda, filling it to the top.
